Jean's Butterfly Salad Toppers


Since gigantic bowls of iceberg lettuce are permitted in unlimited amounts on the Retro WW program, who wouldn't want to eat mounds & mounds of lettuce at every chance they can get? BUT--Are you tired of staring at that same boring salad every single day?

Why not shake things up by topping your salad with a tasty Lepidopteran fashioned out of a pineapple ring, green pepper and pimento? What a great way to surprise your guests at your next ladies luncheon...or a creative way to get those kiddies to eat their vegetables.

Who says dieting has to be boring?

Eliminate the pineapple and you have slug d'oeurvres. What could be more appetizing? And by the way....what the hell was so appealing about pimento? It seems like every recipe back then had pimento in it...even jello. My mom always had a jar of them in the fridge. It was probably the same jar in there from about 1961 to 1971 when we sold the house and moved. Thankfully the pimento's didn't come with us.

I'm on Medifast, sorry if I've already told you this. For some reason we're only allowed like a cup and a half of lettuce. How odd compared to the old school WW ways.
